Spinach Baked Eggs

spinach and eggs breakfast recipe


  • 2 cups of baby spinach
  • 1 clove of garlic minced
  • 2 large eggs


Preheat the oven at 350F. On a gas stove top heat the small sauté pan over high flame, if you are using an electric stovetop heat over medium heat.  Add olive oil to the pan and heat until it begins to shimmer but not smoking. Add garlic to the oil and stir for 10 seconds.

Add the spinach to the pan in 3 or 4 batches. After adding the last batches of spinach push the spinach to the side so that the center of the pan is mostly clear. Crack two eggs into the center of the pan.  Put the pan in the oven for 5 minutes or until your decided doneness is achieved.
